UK: У статті досліджено сучасні тенденції розвитку франчайзингу у сфері HoReCa з акцентом на глобальний досвід та український ринок. Проаналізовано основні моделі франчайзингу, виявлено ключові світові тренди, зокрема розвиток QSR, ghost kitchens, автоматизацію та e-franchise. Розглянуто динаміку малого бізнесу через франшизи у США та Європі, окреслено виклики, пов’язані з економічною нестабільністю, інфляцією, кадровим забезпеченням і контролем якості. Особливу увагу приділено порівнянню специфіки функціонування франчайзингу в Україні та США, включно з регуляторними аспектами, собівартістю продукції та структурою витрат. Представлено кейс-стаді Farmer’s Milk Inc. як приклад успішної адаптації української франшизи до ринку США із застосуванням глокалізації та швидкого масштабування. Визначено стратегічні перспективи розвитку галузі, зокрема удосконалення правової бази, активізацію державної підтримки, інтеграцію інноваційних технологій у бізнес-моделі та розширення можливостей для жінок у підприємництві.
EN: The article examines current trends in the development of franchising in the HoReCa sector, focusing on both the global experience and the Ukrainian market. It provides an overview of the main franchising models and identifies key international trends, including the expansion of quick-service restaurants (QSR), the emergence of ghost kitchens, the increasing role of automation, and the rise of e-franchise solutions. The study analyses the role of franchising in the growth of small businesses in the United States and Europe, highlighting its resilience and adaptability in dynamic economic environments. The comparative analysis between the Ukrainian and U.S. markets reveals notable differences in regulatory frameworks, cost structures, and market entry barriers. In the U.S., the process of opening a franchise outlet involves a lengthy permitting procedure, strict safety and sanitary requirements, and long-term lease agreements, which may slow down initial expansion but ensure legal certainty and stability. In Ukraine, franchise start-up procedures are generally faster and less formalised, though the regulatory environment remains less predictable and offers weaker legal protection for franchisees and franchisors alike. Special attention is given to the main challenges faced by franchising networks, such as economic instability, inflation, workforce shortages, and quality control issues. A case study of Farmer’s Milk Inc. is presented as an innovative example of a Ukrainian-origin franchise successfully adapting to the U.S. market through localisation of production, partnerships with American farmers, and brand development among the Ukrainian diaspora. This case demonstrates practical implementation of contemporary franchising concepts, including glocalisation, fast scaling, and social impact through job creation. The article concludes with an assessment of development prospects, emphasising the importance of legislative improvements, state support for franchising, and expanded opportunities for women entrepreneurs. The findings underline the role of franchising as a driver for sustainable growth in HoReCa and a mechanism for strengthening the competitive position of small and medium-sized enterprises in both domestic and international markets.
